What height and spread will one of these bushes reach? And how close could I grow vegetables to one?

Elderberry plants will grow very fast and can easily grow to 6ft wide. They do tend to grow upwards more so than out. However if you cut them back each season quite aggressively you will still get fruit and they won't get too large
